Regina Escalante is the chef and co-owner of Merci restaurant located in Mérida, Yucatán, México, with two locations in the city. She went to culinary school at the Institut Paul Bocuse in Lyon, France, and has cooked in many places around the world. Chef Regina is active with Slow Food Mexico and joined us last year in Denver as a visiting chef at Slow Food Nations.
