Materials Needed

  • A 1-quart saucepan
  • Water
  • Good quality Black Tea — loose or teabags (Sapna prefers Assam or Darjeeling)
  • Whole milk
  • Cane Sugar
  • A small knob of fresh ginger
  • Green cardamom
  • Black pepper
  • Star anise
  • Cinnamon
  • A fine metal strainer
  • Cup to serve masala chai
