In this class, Basbaas Sauce founder and author Hawa Hassan cooks Sukuma Wiki, a classic Kenyan collards green dish shared in In Bibi’s Kitchen, her new cookbook that weaves the recipes and stories of grandmothers the from East African countries that touch the Indian Ocean.

Hassan also leads a conversation on all the ways that Africa has influenced culinary traditions around the world, with an emphasis on cross-cultural spices and ingredients found in Piri Piri Sauce, Sugo Suqaar and more.

Ingredients Needed for Sukuma Wiki:

2 tablespoons canola oil
1 large yellow onion, finely diced
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground turmeric
2 large tomatoes, coarsely chopped
1 pound kale and/or collards (or any dark leafy greens), tough stems discarded, coarsely chopped
Kosher salt
½ cup water
2 tablespoons freshly squeezed lemon juice
