Last year we began the tradition of holding an annual Slow Food Farm Dinner. This dinner was born from a common idea; bring locally produced food to a community table in the form of a farm-to-table meal. A repeated concept not only in Colorado, but across the world. We love being a part of this cultural shift and celebrated practice, but we’re also excited to continue shaping our unique approach to the concept.
This September we are bringing a remarkable collaboration between chef Paul Reilly and farmer Andy Nowak to Longmont’s Community Table Farm. These two distinguished individuals are teaming up to curate a meal that is not only local, but also sustainable and incredibly intentional. The menu is built around the seasonal produce that will be procured from the host farm, as well as local businesses partnering with us to cultivate the perfect dishes.
Andy and Paul have taken a unique pivot this year to celebrate the method of using a single animal to produce the meat for the evening. They are obtaining a bison that will be butchered specifically for their menu needs. Our hope is that this approach will highlight the importance of slow meat and a holistic approach to including meat in a meal. However, we also want to note that although this method is important when it comes to the consumption of meat, we will also be honoring our vegan and vegetarian guests. There will be intentionality incorporated into separate plant-based courses with artistic, plant-forward dishes that celebrate the season and the senses in unity.
If the dinner itself isn’t enough to hook you for this event, we’re also including other forms of artistry to further elevate the evening. This will include a live band to fill the fresh air with a playful, upbeat rhythm. Additionally, we are specifically designing a silent auction that will be certain to have you reaching for your pocket books not just to support our non-profit, but to win yourself a fun experience, delicious meal, or basket of goodies you didn’t know you needed.
